Emma: This year I've decided to treat my body a little kinder. I'm not the worst eater in the world, but I am certainly not the best either. Rather than reach for the 'easy meals' especially when I am back at work, I want to be prepared and armed with easy recipes or meals I've prepared earlier. So I've turned to my friend Lauren who has provided me with a 6 week meal plan (with handy grocery guide) that even I can do! I'm starting my meal plan over the Australia Day long weekend and I'll keep you posted on my progress.

Here Lauren shares one of her recipes for us all.

For many, the thought of making changes to their current eating habits is somewhat overwhelming, as they have been doing the same thing for so long and it has become second nature. But habits can be broken, and new ones created. Find what works for your tastes, and work with it. Nutritious and, most importantly, tasty meals make healthy eating enjoyable completely rewarding. The Vietnamese Lettuce Cups in our program are one of the most popular, and such a great way of incorporating your vege quota without it feeling like a chore. Enjoy!
300g pork mince 100g bean sprouts 1 garlic clove minced 1 Tbs grated ginger ¼ cup tamari soy sauce 4 Iceberg lettuce leaves 1 coarsely grated carrot ½ cucumber in matchsticks 6 snow peas sliced finely lengthways ½ green apple grated ¼ cup finely sliced mushroom 1 sprig coriander chopped 1/3 cup fresh mint leaves picked lime and fresh chilli (optional)
Method· Arrange all vegetables and herbs on a platter.· Heat 1 Tbs coconut oil in a wok or large fry pan on med-high heat.· Add ginger, garlic, pork mince and sauce.· Cook until all mince is cooked. · Stir in bean sprouts·. Place a lettuce cup on your plate and load it up with the vegetables, meat mixture and apple. Top with coriander, mint and if you like, some fresh chilli.
