Emma: I first met Lauren way back in the early 2000's (eek!) when we were young paralegals at a law firm. Nearly 15 years later we both have a couple of kids and Lauren has embarked on a new career which really excites me: she is a Lifestyle, Food and Wellness Coach!
Lauren: I have not always been so passionate about healthy eating. I was one of those people who when I went to see a movie (aka that time when I used to actually see movies before children!), I'd visit the candy bar beforehand, load up a massive bag of lollies, and devour them before the previews had even started.
Suffice to say, my decision to start eating clean and eliminate sugar from my diet raised a couple of eyebrows, mainly from my family....'here she goes again, another phase, much like purple hair, green doc martin, alternative grunge phase circa 1995'.
Eating these makes me feel like I'm cheating - how can they be healthy?! Well, they are sugar free, gluten free, dairy free and full of nutrients thanks to the goodness of almonds. Now my greatest challenge is just hiding them from my husband!
One of my favourite parts of the day is when my one year old (hopefully) has a morning sleep, I make my coffee and I sit down with one (alright, two) of these beauties....it's the little things.
Almond Coconut choc chip cookies
1 1/2 cups almond meal
1/2 cup desiccated coconut
4 Tbs coconut oil
2 Tbs Rice Malt Syrup
25g dark chocolate (85%), chopped
1/4 tsp salt
1/4 tsp baking powder
Preheat oven to 150 degrees, line baking tray with baking paper.
Combine all ingredients in a bowl and then roll a tablespoon of the mixture into a ball and place on baking tray. Continue with the rest of the mixture.
Bake for approxiamtely 15 minutes (or until they start turning golden). Keep an eye on them as all ovens are different. Allow to cool and keep in an airtight container (I keep mine in a fridge).
